Coco Shambhala Bell Pepper Salsa

For the love of BELL PEPPERS!

Here is the simplest, quickest DIP/SALSA recipe created by Giles Knapton, Director @cocoshambhala ! – he’s a man with multitudes of hidden talents 😍👨🏻‍🍳 All thanks to his ingenious recipe, we always welcome our guests with this delicious salsa served with a side of crisped local Poee Bread ✨

Ingredients – (Serves 2)

1 Yellow bell pepper julienned
2 Red bell pepper julienned 
1 onions julienned
2 tomato diced
2 garlic cloves 
2 fresh red chili 
3 tbsp olive oil 
3 tbsp lemon juice
Salt to taste
Pepper to taste
3 tbsp Chopped coriander 

Directions

1. Sauté peppers, tomatoes, onions, garlic, red chilies in olive oil untill cooked and soft. Add chopped coriander.
2. Blend everything.
3. Take out in bowl & add salt, pepper, & lime juice.
4. Drizzle extra virgin olive oil on top
Serve with hand-cut fries or crisps.
