A version of a Burmese Khaw suey
Coconut Curry with Noodles and Condiments

Ingredients

    1. 1 packet boiled hakka/ramen noodles

    Curry

    1. 1 cup onion garlic paste

    2. 1/2 cup besan (chickpea flour)

    3. 1.5L chicken/veg stock

    4. 1/2L fresh coconut milk vegetable

    5. Oil

    6. Salt

    Condiments

    1. Hakka noodles (raw noodles fried golden)

    2. Chopped coriander & mint

    3. Lemon wedges

    4. Chopped boiled eggs

    5. Roasted crushed peanuts

    6. Chili garlic oil (recipe below)

    7. Shredded boiled chicken/ sautéed vegetables


Directions

Curry Method

  1. Heat the pan

  2. Brown the onion garlic

  3. Add besan and cook on slow heat for 5-6 mins

  4. Add stock and let it come to a boil

  5. Add the coconut milk

  6. Season with salt

Chili Garlic Oil Recipe

  1. Heat a small pan

  2. Add 1 cup vegetable oil and bring it to smoke and shut the heat

  3. Add 1 tbsp grated garlic

  4. 1 tbsp red chili powder

  5. Add 3 tbsp water

  6. It will sizzle and cool
