Ingredients (For 10 pieces))

  • 2 tortillas

  • 200g Peeled and Chopped Pumpkin

  • 1 large onion chopped

  • 1 tbsp Madras Curry Powder

  • 1/2 Tsp Truffle Paste

  • Extra Virgin Olive Oil

  • Salt

  • Coin size cookie cutter

Directions

  1. Heat a Pan, add the olive oil, onions and cook untill transparent

  2. Add the pumpkin and cook untill soft on low heat โ€“ you can also put them in the oven

  3. Add the curry powder and remove from heat

  4. Add the Truffles once cooled

  5. Puree the vegetables then strain

  6. Put into a Piping Bag

  7. Cut the Tortillas into coins using the cutter

  8. Heat oil and cook until crisp

  9. Pipe the Pumpkin Puree on the warm Tortilla.

  10. Decorate as you please !
