Curry Leaf Butter Poached Sweet Potatoes

A delicious, nutritious winter vegetable – Sweet Potatoes must make it to your kitchen and plate this season! This recipe is delicious and very easy to make with ingredients that can be sourced across the country or the world. I have used curry leaves (I admit I am biased towards them! 🌿), but you can use any fresh herb of your choice.

Ingredients

  • 1 kg sweet potatoes diced with skin

  • 200gm butter

  • 4-5 garlic cloves sliced very thin

  • Just of 1 lemon

  • 10-15 curry leaves

  • Salt

  • Freshly crushed Black Pepper

Directions

1. Blanch the sweet potatoes in salted boiling water for one minute. Remove
2. Heat a pan and add the butter, the curry leaves and the garlic slivers
3. Add the half of the lemon juice. Salt and taste if you need more sourness
4. Sprinkle with freshly crushed black pepper and serve warm
