Spiced Colocassia Root Chips – Arbi Tuk

Bringing out the unsung hero’s of the local vegetable markets is my place of absolute joy. Nothing excites me more than picking up vegetables that are used only in traditional Indian recipes and are rarely perceived in any other manner. This is a simple salad made from Kohlrabi or as we call it in Hindi – गाँठ गोबी . This root vegetable grows across the Indian subcontinent and is jam packed with complex flavors and juiciness.

Ingredients

  • 150gm colocassia roots (Arbi)

  • 1 tsp red chili powder

  • 1 tsp coriander powder

  • 1 tsp chaat masala

  • 1 tsp roasted cumin powder

  • Oil to deep fry

  • Salt

Directions

1. Put the arbi in the pressure cooker with 4 cups of water and a tbsp of salt for 5-6 whistles 

2. Peel and quarter into wedges

3. Heat oil for deep frying in a pan till it reaches 70-80 degrees

4. Add the arbi and fry on medium flame until golden 

5. Mix the dry spice powders in a bowl 

6. Remove the arbi in a strainer and sprinkle well with the spice mix 

7. Serve with lime wedges
