Coastal Clam Curry

Ingredients (serves 4)

1 kilo fresh clams
5 cups milk from fresh coconuts
1 cup chopped onions
1 tbsp chopped garlic
2 tbsp chopped green chili
1 tbsp grated ginger
1/2 cup chopped coriander
2 cups chopped tomatoes (with skin and seeds)
Juice of 1 lemon
1 tsp turmeric powder
1 tsp red chili powder
1 tsp mustard seeds
10-12 curry leaves
1 tbsp grated jaggery
2 tbsp ghee
Vegetable Oil
Salt to taste

Directions

  1. Heat a deep pan, add oil. Add mustard seeds

    2. Once they start popping, add the curry leaves, turmeric powder, red chili powder

    3. Add the onions, and garlic and let it sweat

    5. Add the tomatoes and jaggery and cover. Cook for 5-7 mins 

    6. Add the clams and coconut milk, salt and cover for 5 mins until all the clams have opened

    7. Add the lime juice and ghee and top with coriander to serve
