Ajo Blanco

Lockdown Recipes: Try my Ajo Blanco! ๐Ÿ˜‹.
India is getting โ˜€๏ธโ˜€๏ธโ˜€๏ธ!! I donโ€™t know about you, but my body is craving cooling foods.
This soup is that perfect cool antidote and never fails to deliver.
The traditional Spanish recipe has almonds, whereas I have replaced them with cashew nuts โ€“ a more abundant ingredient (and cheaper!) in Indian pantries.
I have twisted the recipe to suit my needs by adding other cooling ingredient like cucumber ๐Ÿฅ’.
Itโ€™s a delicious soup, light yet filling and it will do a whole lot of good to your body. Try it! ๐Ÿ‡ฎ๐Ÿ‡ณ

Ingredients

  • 1 cup boiled cashews

  • 1 cup chopped cucumbers

  • 1 cup chopped green apples (or red)

  • 1.5 cloves garlic

  • 1 slice of bread (stale is ok too)

  • 1.5 tbsp Sherry vinegar (or any good quality vinegar)

  • 2 tbsp extra virgin olive oil

  • 1 cup chilled water

  • 1 cub ice cubes

  • A few grapes sliced for garnish

  • Fresh dill

  • Freshly ground black pepper

  • Sea salt to taste

Directions

1. In a blender, add cashew paste, cucumbers, apples, chilled water, ice, garlic, bread, vinegar, oilive oil, salt. Blend untill smooth

2. Strain. Taste the balance and add salt, vinegar if needed

3. Serve in a pasta plate. Drizzle with Olive oil and place hand torn dill leaves

4. Put chopped grapes. Sprinkle with freshly crush black pepper.

Serve chilled!!
