Jackfruit Dum Biryani (feeds 4)

Drumsticks grows wild and in abundance in most parts of India. Used in quite a few regional cuisine recipes, I decided my own take on it. I made a chilled Drumstick Soup with coconut milk and veggies. This delicious vegetable has high fibre, packed with nutrients and has a beautiful rounded flavor. Ingredients

  • Marinate for 2 hours:

  • 3 cups jackfruit and seeds boiled in turmeric and salt

  • 1 cup fried onions browned

  • 2 tbsp grated garlic 

  • 2 cups yogurt

  • 1 tbsp ginger chili paste 

  • 1 tsp garam masala 

  • 1 tsp turmeric 

  • 1 tsp chili powder 

  • half boiled potatoes sliced

  • 1.5 cup half boiled rice with salt 

  • 1 cup browned fried onions 

  • 1/2 cup ghee 

  • 3-4 pepper corns

  • Cinnamon stick Mace

  • Black cardamom (or green) 

  • Few cloves 

  • 1 cup chapati dough

  • 1 coal for smoking

  • 2 tsp soaked saffron 

  • 1 cup chopped coriander

Directions

In a deep pan heat 1/2 the ghee. Add whole spices. Fry for a min

  1. Add the jackfruit and cook for 10 mins on slow flame. Add salt if needed. Keep aside

  2. Take a handi or deep pot and layer the potatoes in the bottom of the pan

  3. Make a layer of rice. Top with jackfruit. Add another layer of rice. Pour some ghee and chopped coriander. Then add some saffron liquid. Top with jackfruit. Repeat till you reach the top of the pot.

  4. Cover with fried onions, chopped coriander and the rest of saffron. 6. Heat the coal untill red hot. Put in a small container and place on top of the Biryani rice. Sprinkle some garam masala and pour a few drops of ghee. It will start to smoke.

  5. Close the lid of the handi/pot and cover the edges with captain dough so no steam or smoke escapes.

  6. Place on stove top and cook for 40 mins on medium flame and until the chapati dough is cooked and breaks off easily. It should not be sticky or raw

  7. Your biryani is now ready to serve!

    Note: Replace the jackfruit with your choice of protein or vegetables!
