Spiced Eggplant Steaks in Mustard Oil

Ingredients (serves 2)

  • 3 bottle eggplants (big round ones)

  • Cold pressed mustard oil

  • 1 tsp turmeric

  • 1 tsp chili powder

  • 1 tsp roasted cumin powder

  • Salt

Directions

1. Remove the crown of the eggplant
2. Cut the eggplant into disks 3cm thick
3. Put the eggplants into a deep bowl, add the turmeric, chili powder, cumin powder and salt and rub both sides of the eggplant in that. Coat both sides well
4. Let it sit for 5-7 mins 
5. Heat a pan on low heat, add 2 tbsp mustard oil and place the eggplants 
6. Cook slowly on each side till the eggplants are soft and golden 
7. Serve with a wedge of lemon and yogurt with chopped herb of choice
